A Frank Quickie: Parmesan Broccoli Balls

We had a few friends over for game night, this weekend, and my wife found this recipe online. It was easy, and fairly quick; the most time expense is rolling the balls. They turned out really delicious! And besides, who doesn't enjoy a good bite-size ball! 

I'm posting the recipe with my revisions, as I actually prepared them. Enjoy! 




Parmesan Broccoli Balls

10 oz broccoli (can be chopped frozen or fresh)
1 medium onion, small diced
1 - 6 oz package chicken flavored dry stuffing mix 
1/2 C grated Parmesan cheese
1/2 C shredded Cheddar cheese
4 eggs, beaten 
3/4 C butter, melted
1 tsp black pepper
1/2 tsp garlic salt

1.  Place broccoli in medium saucepan and cover with water. Cover and heat to boiling. Cook 
     for 5 minutes, then remove cover and cook an additional 2-3 minutes. Drain and let cool. If 
     you used fresh broccoli, you can chop it at this point. 

2.  While broccoli is coming to a boil, place approximately 1 Tblsp of butter or olive oil in a 
     medium skillet. Saute the onion until translucent. Let cool. 

3.  In a large mixing bowl, thoroughly mix broccoli, onions, dry stuffing mix, Parmesan cheese,  
     Cheddar cheese, eggs, butter, pepper, and garlic salt. Cover and chill for approximately 1
     hour, until all the moisture is absorbed. 

4.  Preheat the oven to 325°F. 

5.  Roll the mixture into 1 inch balls, and place on a lightly butter sprayed baking sheet.

6.  Bake for approximately 25 minutes, or until browned. 

7.  Place in a cool looking serving dish, and garnish with additional Parmesan cheese, and serve!
